A delicious summertime salad!

Marinated White Anchovy and Cucumber Salad
Don’t let the word “anchovy” scare you. These white anchovies, or boquerones, are much milder than the classic pizza topper and preserved in vinager and oil rather than salt. If you’ve never had them, be sure to give ‘em a try. They’re delicious and refreshing when served with this tangy cucumber and tomato salad.

Marinated White Anchovy & Cucumber Salad
Serves 4
1 Medium cucumber (julienne)
1 cup grape tomatoes (sliced in half)
16 marinated white anchovy fillets
2 tbs chopped capers
1 tbs chopped parsley
2 tbs fresh lemon juice
3 tbs extra virgin olive oil
Salt to taste
Black pepper to taste
In a bowl toss all of the ingredients together and serve in 4 chilled bowls.
